This Asian inspired WW recipe is found on page 166 in the WW 50th Anniversary Cookbook, and is easy to prepare with a marinade and quick grilling with just a few ingredients. I like simple, yet flavorful recipes, and this one fits the bill. We like our tuna medium-rare, almost just seared enough to get the outside charred, but the inside still pink. If you like your tuna cooked more just keep it on the grill for an additional 3-4 minutes per side.
Ingredients
2 tablespoons low-sodium soy sauce
2 tablespoons fresh lemon juice
2 tablespoons dry white wine or low-sodium vegetable stock
2 teaspoons sesame oil
2 cloves garlic, minced
freshly ground black pepper
4 (6-ounce) Ahi tuna steaks, about 1 1/2 inches thick
non-stick spray
Procedure
Combine the soy sauce, lemon juice, wine or stock, sesame oil, garlic and black pepper in a large zip-type bag, stir well. Add the tuna steaks and remove all air from bag. Place bag in refrigerator and turn every hour or so, marinate for at least 2-hours.
Spray the grill with non-stick spray and heat up the grill until very hot. Remove tuna steaks from the marinade and discard the liquid. Place the tuna steaks on the grill and allow to cook for 2 minutes, then pick up and turn the steaks about 45-degrees and continue cooking another 2 minutes. Flip the steaks over and finish cooking on the other side for about 4 more minutes, or until cooked to desired doneness.

While traveling in Charlotte, NC between the 2022 holidays, we enjoyed a dinner meal at Caroline’s Oyster Bar which is located at 120 E. Brooklyn Village Ave, Charlotte, NC 28202, in the heart of downtown.
We selected a sampling of every oyster on the raw bar menu which featured oysters from Canada, Virginia, New Jersey, Maine, and North Carolina. The oyster selection from the raw bar included Beausoleil Oysters from New Brunswick, Canada, Olde Salts Oysters, Chincoteague Bay, Virginia, Blue Point Oysters from Norwalk, New Jersey, Orchard Point Oysters from Stevensville, Maine, Carolina Gold Oysters from Newport, North Carolina, and Barstool Cocktail Oysters from Prince Edward Island, Canada.

It’s a nice change getting access to east coast oysters from a diversity of places, an alternate to our generous supply of Gulf Coast oysters we are accustom to here in the deep south.

This is a WW take on the famous French cuisine recipe, and utilizes the same techniques as the traditional, but uses ingredients and preparations that lend well to a lighter version in this recipe.
The recipe is also found on page 132 in the WW 50th Anniversary Cookbook, which is the recipe I used in making this dish.

I utilized catfish for this recipe as a substitute for the cod filets in the ingredient list for the near similar online WW Fish and Chips recipe, its found on page 162 of the WW 50th Anniversary cookbook. We have such an abundance of locally raised catfish in the Gulf South, so it’s easy to utilize it in many fish recipes. Catfish is typically and most popular as a battered and deep fried delicacy, but it is quite versatile and cooks up wonderfully in an oven fried manner.
Oven Fried Fish and Chips
Typically found on most seafood restaurant menus, fried catfish was also a staple Friday menu item special on just about every restaurant and café I’ve worked. The best traditional fried catfish recipe had the filets marinated in a mixture of yellow mustard, red wine vinegar, and red pepper flakes. Then straight from the marinade and dredged into the seasoned cornmeal/corn flour, and straight into the deep fryer. Now that’s good eatin’!
The WW batch I made uses Dijon mustard, but Creole mustard would be a great substitution as well.
