This recipe calls for ½ lb. of back fin crabmeat and ½ lb. of claw crabmeat for added flavor, and I find the claw meat also adds a bit of firmness to the texture of the stuffing as well. The Panko breadcrumbs are actually an addition to the original recipe, and the cocktail sauce is served as an alternative to the traditional beurre blanc sauce that would be served on the side also. Another ingredient that is found in the traditional “Imperial” preparation is mayonnaise, and it has also been eliminated from this version.

A few mental notes for the next visit to Earp’s – they do sell frozen crawfish tail meat imported from China, so that will only do in an absolute pinch. But they also have frog legs, scallops and just about any fish. Grouper, salmon, catfish, haddock,Pollock, trout, red snapper, and flounder were also available on our visit.

This recipe comes from the Weight Watchers® Annual Recipes for Success 2008 edition.1 And this particular recipe is found on page 73 under the Fish & Shellfish category section. One of the features about each recipe is that they will list the WW® points value and also the per serving nutritional values typically including calories, fat, carbohydrates, protein, fiber, cholesterol and sodium among a few others too. So if you are tracking your points or calorie intake these make it much easier to follow on your meal plan.
