Some of the freshest shrimp I have seen in years, and the heads were tight with very little orange color fade and some even had none.

Seafood Paella Risotto

The original recipe named “Seafood Paella” utilizes Arborio rice and is prepared much like a risotto; therefore, as our first update we have added “Risotto” to the recipe title. Thought about removing the “Paella” portion of the title since there is no sausage in the dish, but with the paprika and saffron the name persists.

This classic dish has also seen a revitalization lately among restaurants both in and outside of Louisiana, and variations include additional ingredients in the topping such as shrimp and crawfish tails. In addition, some are now adding a thicker batter to the fish with eggs and breading, such as with panko breadcrumbs for a crunchier texture.
