Minestrone Soup

While the recipe calls for some frozen vegetables, they really are not that bad at all, in fact, it makes the soup go together quite quickly. Yet, if you prefer fresh vegetables, you could add sliced fresh zucchini, yellow squash, cauliflower, broccoli, Italian green beans, red peppers, carrots, baby lima beans in any combination that yields a pound.

Split Pea Soup Retooled

the original recipe called for adding the ham at the end with the herbs and seasonings in step 3, we add the ham in our version in step 2 along with the chicken stock, split peas, and potato, thus extracting more of the salt and ham flavor into the soup during the one-hour or so of simmering.

Crawfish Bisque

A few ingredients not found in the original recipe, but that I added is the brandy and heavy cream. Most great bisques that I have had the pleasure of tasting typically are finished with a bit of brandy and cream. Therefore, I have included these two ingredients for finishing this bisque as well.
