1 medium-sided head cauliflower
1 tablespoon olive oil

4 sprays olive oil cooking spray
1 tablespoon fresh chopped parsley
Procedure Steps
Preheat your oven to 425°F (220°C).
Place 1 whole head of cauliflower into a large cast iron Dutch oven. Coat the top of the cauliflower with 2 sprays olive oil cooking spray. Evenly coat the top of the cauliflower with garlic salt and black pepper. Put lid on top of Dutch oven and place into the middle rack of your preheated oven. Roast for 1 hour. Remove lid and coat again with 2 more sprays of olive oil cooking spray, then top with fresh chopped parsley.

This recipe is inspired from the WW recipe for Pan-Fried Flounder, which serves only 4 portions. I’ve upped the yield to 6 portions and utilize 6-ounce catfish filets as opposed to the 4-ounce flounder filets. The catfish was purchased at Sam’s Club, and is sold fresh in a vacuum sealed package. l prefer the larger portion 6-ounce catfish filets, since they make a better presentation and provide more uniform texture and protein.
Pan-fried catfish is a beloved dish in Southern cuisine, known for its crispy exterior and tender, flavorful meat. Catfish, a freshwater fish species, has been a popular food source in the United States for centuries. In a separate medium bowl combine the cornmeal, cheese, thyme, garlic salt and pepper. Stir well, then transfer the breading mixture to a sheet pan.
Spray your nonstick skillet with cooking spray and add 1 tablespoon olive oil, set pan over medium-high heat. Working in batches dredge the catfish filets in the cornmeal mixture to evenly coat, then place them rounded side down into the hot pan, cooking two filets at a time. Cook the filets for about 4-minutes on the first side, then flip over and finish cooking another 4-minutes, or until fish flakes easily. When fully cooked, transfer the catfish filets to a holding plate and keep warm. Repeat the dredging and cooking steps for the remainder of the fish.

4 8-ounce skinless mahi mahi filets
24 medium cherry tomatoes, halved
1 medium zucchini, sliced into 1/2 moons
1 medium yellow bell pepper, sliced
1 medium shallot, thinly sliced
2 teaspoons fresh dill, chopped
2 teaspoons fresh thyme, chopped
1/2 teaspoon garlic salt
1/4 teaspoon fresh cracked black pepper
Procedure Steps
Preheat oven to 400° F. Pull out 4 12-inch wide sheets of aluminum foil and place on a sheet pan.
Place fish filet in the center of each foil piece and top with an evenly divided amount of the remaining ingredients as listed above. For example, each mahi mahi filet gets 12 cherry tomato halves, 1/4 of the zucchini slices, and so on. Fold the foil for a tightly sealed packet. Place the packets on the sheet pan an into the oven for 15- to 20-minutes or so until the fish is cooked through. Let stand at room temperature for 5-minutes before opening the packets, being careful of any escaping steam. Yield is 1 filet and about 1-cup of vegetables per serving.

3 tablespoons white miso
1 1/2 tablespoons brown sugar
1 tablespoon sake
1 tablespoon mirin
4 5-ounce cod filets, skinless
2 tablespoons green onions, sliced
Procedure Steps
In small bowl, whisk miso, sugar, sake, and mirin and spread over fish. Cover and refrigerate for at least 2 hours or up to 1 day.
Off the heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire using charcoal.
Remove fish from marinade and reserve marinade. Lightly spray the filets with more cooking spray, then transfer the fish filets to the grill, and grill fish for 5 minutes. Turn fish over and brush with reserved marinade. Continue to grill until fish is opaque and flakes easily with a fork, about 5 minutes. Garnish fish with scallions before serving.
