Ginger Glazed Salmon

Ingredients

  • 1/4 cup thawed orange juice concentrate
  • 2 tablespoons fresh grated ginger
  • 2 tablespoons dark brown sugar
  • 2 tablespoons fresh lime juice
  • 2 teaspoons low-sodium soy sauce
  • 1/4 teaspoon fresh cracked black pepper
  • 1/8 teaspoon kosher salt
  • 4 6-ounce salmon filets
  • Cooking spray
  1. Combine the first 7 ingredients in a small bowl, stir well and set aside.
  2. Coat salmon filets with cooking spray. Place a large cast iron skillet over medium-high heat until hot, then add the salmon filets. Spoon 2 teaspoons of the orange juice mixture over each salmon filet and continue to cook for about 3-minutes. Turn over the salmon filets and spoon an additional 2 teaspoons of the orange juice mixture over each salmon filet, continue to cook about 3-4 more minutes, or until your desired doneness. Transfer the salmon to a serving platter.
  3. Reduce the heat to low and add the reserved orange juice mixture to the pan, stir the liquid for about a minute, scraping the skillet to loosen browned bits. Spoon the sauce over the salmon filets.
