So it was our 14th wedding anniversary yesterday and we celebrated over the weekend with a dinner at Ruth’s Chris Steakhouse so we were not going out to eat again during the week day. Monique and I did meet up at a Bob Evan’s for lunch and that was some good home cooking, I love their pot roast sandwich and she gets their breakfast items often.
Any who, we really wanted something quick and easy last night so I whipped up some of these Vegetable Quesadilla’s for the three of us. Only about 30 minutes from prep to sitting at the dinner table too, this is a really quick and easy way to enjoy the southwest favorite. I stuffed some extra vegetable filling into these three that I made, but the recipe is written to yield 4 servings.

Preparation Steps |

In one pan sauté the onions and peppers with the spices and garlic salt until soft, then add the mushrooms and stir well until soft. |

Add the tomatoes and cook down until soft, then add the spinach stirring until wilted, this is the filling. |

In the other pan over medium-high heat place a tortilla and then add ¼ of the filling and sprinkle on top with ½ cup of the cheese, then top that with another tortilla. When the tortilla is browned flip and brown the other side and until the cheese is melted. Remove and slice into ¼ wedges. Serve with sour cream and salsa if you desire. |
