Toscana di Tilapia

TilapiaOn occasion we have no idea what we are going to have for dinner and it comes down to whatever we happen to have on hand either in the pantry, refrigerator or freezer, mostly in all three. We happened to have some tilapia in the freezer so we decided to prepare that in some fashion for dinner last night. When I got home from work I set the filets into some thawing water and proceeded to cobble together the Tuscan Italian inspired dish.  Just something I threw together with available ingredients, and quickly set up this dish from prep to dinner table in under 45 minutes.

Ingredients

Tilapia filets

Can

Rotel Tomatoes, diced (14 oz)

½

Cup

Balsamic Vinaigrette dressing

1

Tbsp

Lime juice

½

Tbsp

Italian Seasoning

2

Tbsp

Capers

2

Tbsp

Italian Bread Crumbs

 

 

Non-Stick Spray

Procedure Steps

1.

Pre heat the oven to 350° F.

2.

Lightly coat a sheet pan with the non-stick spray then evenly space the tilapia filets onto the pan.

3.

Mix the diced tomatoes with the vinaigrette dressing and lime juice then evenly spoon this mixture over the tilapia filets.

4.

Season them with the Italian seasoning and then top with the capers and sprinkle on the bread crumbs.

5.

Place the sheet pan with the tilapia and ingredients into the oven and bake for 15-20 minutes or until the tilapia flakes easily with a fork.
