Plant is food, it’s the title of the vegan restaurant in Asheville, NC, which has been around for just about 12-years since the summer of 2011, and is located at 165 Merrimon Ave, Asheville, NC 28801. Started by Jason Sellers, Leslie Armstrong, and Alan Berger, Plant has made it’s mark on the culinary landscape not just from the expertly prepared meals, but for taking plant-based cuisine to new levels.
I’ve had the fortune to visit Plant on several occasions for dinner with family, and the dining experience has been delightful every time. Not only is the food prepared to perfection, but the bar has a creative collection of libations to whet any appetite for infusions and spirits.
A must have is the Ravioli** $22 – made with cremini mushrooms & ricotta · kabocha squash alfredo · macadamia parma · Italian olive oil , sherry, & truffle. **Cannot be made gluten-free.

This WW recipe is found on page 36 of the Weight Watchers Magazine Annual Recipes for Success 2000, and has been in our cookbook collection for over 23 years and counting. The Spinach and Caramelized Onions Pizza is 6 WW points per serving for those who track their meals, and 308 calories, with 40g total carbs. This recipe uses frozen chopped spinach, which is cooked, drained and the excess liquid is squeezed out before adding to the pizza dough, then topped with crumbled feta cheese and the caramelized onions before finishing in the oven to get the crust toasty and cheese melted and golden browned on top.

These cookies are a tasty treat, we loved them so much I turned out two batches of these in one week. The WW recipe is 3 points per cookie for those who track their meals, and 107 calories with just 7g total carbs. The recipe calls for 1-cup of powdered peanut butter, but I used extra crunchy peanut butter and they came out perfectly.
We had some extra oats on hand in our pantry and decided to find some recipes to use them up, and this one was a great way to use up the quick cooking oats.

We made a batch of these as a side dish for the Chili-Rubbed Pork Chops, and these baked beans are amazing, sweet and thickly cooked down in the oven for 1 1/2 hours. The beans are 3 WW points per serving for those tracking their daily meals. For the recipe on WW website to go Maple baked beans.
Quick and easy to put together, you just coat a small baking dish with non-stick spray and add all your ingredients, stir, cover with foil and put into your 425° F pre-heated oven for 90-minutes.
