The recipe calls for fresh baby artichokes, but since these were not available in our area I opted for canned artichokes hearts in water, and they seemed to work out well. This one-pan meal is an easy in the oven roasted chicken. The garlic, fresh thyme, lemon zest and fresh lemon juice combine to make a nice flavor addition to the chicken, and pairs well with the artichokes.
