This is another recipe that Monique picked out of the Weight Watchers® Annual Recipes for Success 2008 edition1 cookbook and is found on page 47. We made a batch on Sunday, and they are some of the best and chewy chocolate fudge brownie-like morsels we have ever tasted. The gooey center with the crunchy pecans and chewy dried cherries really make this a fun treat! And for those who do track their WW points they are listed at a value of 1 point each!
The recipe calls for mini muffin tins, and the original recipe lists the yield at 21 cookies, however, we were able to make 24 of them and used all of the slots in our 2 twelve muffin count tins for the single batch recipe. Total prep time is about 10 to 15 minutes and once they are in the oven and ready to eat is about another 25 minutes. So in about 40 minutes you can have these tiny fudgy brownie-like treats filling up chocolate aroma in your kitchen too! | ||

1 1/4 | Cups | Sifted powdered sugar |
1/3 | Cup | Unsweetened Cocoa |
1/2 | Tsp. | Espresso powder (or any coffee powder) |
1/8 | Tsp. | Salt |
2 | Large | Egg whites |
1 1/2 | Tsp. | Vanilla extract |
1/2 | Cup | Dried cherries, coarsely chopped |
1/2 | Cup | Pecans or walnuts, coarsely chopped |

Procedure Steps | |
1. | Pre-heat oven to 300° F. |
2. | Combine the sifted powdered sugar, cocoa, coffee powder, salt, egg whites and the vanilla extract in a large bowl. Beat with a mixer at low speed until combined. Then beat at medium speed for 2 minutes. Then stir in the cherries and nuts. |
3. | Spoon 1 level tablespoon of the batter into miniature muffin tins that have been coated with cooking spray. Bake at 300° F. for 16 minutes, or until puffed and crisp on the top. Let stand on a wire rack for 5 minutes before removing from pan. Then cool on a wire rack. |

I have no idea how I skipped this recipe!?!? It’s maybe because I was busy with wedding plans lol That can be the only excuse! Thanks for reminding these to us! I have fresh cherries in the freezer; do they make it well, too?
