Eat To Live Week 3 Recap (Sunday, April 11 – 17, 2010)

Ryan: Lost 3 pounds in week three, and at 222.5. Total weight loss after three weeks: – 8.5 pounds.

My Dear Wife: Lost 3 ½ pounds in week three. Total weight loss after three weeks: – 7 pounds.

Breakfast

Fruit salad of pineapple, kiwi, and cantaloupe, with flax seed, tea with honey and a splash of skim milk and a small glass of orange juice.

Lunch

Salad ~ with a quick homemade salsa. This was essentially a cold salad plate with romaine lettuce, black beans, whole kernel corn, salsa, cucumbers, garbanzo beans, ½ a sliced avocado, and some queen olives. The oil-free and salt-free salsa is the dressing.

Barbecued Eggplant with Split Peas

Dinner

Barbecued Eggplant, a wonderful dish that has a nice barbecue flavor and is modified from the American Wholefoods Cuisine cookbook.

Activity

Mow the lawn and yard work, 3 hours.

Clementine and dates, tea with honey and a splash of skim milk, and ½ cup orange juice.

Lunch

Leftover barbecued eggplant and beans, and fresh fruit, Immunity drink and nuts.

Dinner

Leftover barbecued eggplant and beans.

Activity

Neighborhood walk for 30 minutes. My dear wife at Curves, and Ryan on Wii Sports and Wii Fit for 30 minutes.

Clementine and dates, tea with honey and a splash of skim milk, and ½ cup orange juice.

Lunch

Salad with cucumbers, romaine lettuce, spinach, salsa, olives, garbanzo beans, and fresh fruit, Immunity drink and nuts.

Dinner

Leftover barbecued eggplant and beans.

Activity

Neighborhood walk for 30 minutes. My dear wife at Curves, and Ryan on Wii Sports and Wii Fit for 30 minutes.

Breakfast

Clementine and cantaloupe, tea with honey and a splash of skim milk, and ½ cup orange juice.

Lunch

Salad bar salad at company cafeteria with mixed spring lettuce, romaine, spinach, red kidney beans, beats, grilled zuchinni, squash and onions, raisins, cucumbers, tomatoes, jalapeno slices, and fresh peas.

Dinner

Left over great northern beans

Activity

Neighborhood walk for 30 minutes. My dear wife at Curves, and me on Wii Sports and Wii Fit for 30 minutes.

I had left over great northern beans and my dear wife had a salad, a Fiber one bar, dates, and nuts.

Breakfast

Lunch

Garden Burger at Red Robin with a side salad and balsamic dressing on the side.

Dinner

Leftover blackeyed peas with 1 slice left over pizza as an appetize.

Activity

Neighborhood walk for 1 hour, and went to the local farmers market and herb festival.

    I love the Wii Fit~ but I hate what its description on my is~! That eggplant sounds awesome you are a true inspiration, I hardly have eaten anything with sugar and looking at portion control…love the results your getting!
