This is such an easy dessert to make, it’s hard to believe we don’t make it more often. I’ve made it so many times I just throw it together because all the ingredients are typically always in my pantry and bar.
Ingredients
- 1 stick (4-ounces) unsalted butter
- 1/2 cup packed brown sugar
- 1/2 cup granulated white sugar
- 1 cup rum
- 1/2 tablespoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon nutmeg
- 1/4 teaspoon table salt
- 4 medium ripe bananas, cut in half lengthwise, and then cut each half into 3-inch long or so pieces (see photo of bananas in sauce)
- 1/2 cup heavy cream
- 2 cups vanilla ice cream
Instructions
- Place a large heavy bottomed skillet over medium heat, add butter and allow to melt. Add the two sugars and stir until dissolved, then bring to a slow simmer over low heat.
- Add the rum and whisk until the bubbling stops, then whisk in the spices and salt. Simmer for a few minutes into thickened slightly.
- Gently add the sliced bananas to the sauce and stir to evenly coat, then add the heavy cream. Continue to simmer over low heat until bananas are softened and sauce thickens.
- Scoop 1/2-cup portions of ice cream into 4 individual bowls, then evenly portion out the bananas and sauce into each bowl.
