Avocado Boats with Salsa

Avocado Boats with Salsa

This quick and easy appetizer/snack is only 2 PointsPlus® per “boat” for those who use the tracking for the Weight Watchers© (WW) system.  If you are familiar with WW then you already know that salsa is “Free”, meaning it has no points associated with it’s ingredients. This recipe that I will share today is a slightly modified version of the one I found through the WW iPhone app, and is also available online.

Ingredients

1 Medium Roma Tomato, chopped
2 Tbsp Onion, chopped
1 Tbsp Cilantro, chopped
1 Tbsp Red wine vinegar
1/4 Tsp Cumin, ground
1/4 Tsp Chili powder
1/8 Tsp Ground black pepper
1/8 Tsp Sea salt
1 Medium Avocado, cut into quarters, pit and skin removed
2 Tsp Sour cream, fat free
4 Each Cilantro leaves, whole

Putting it all together

  1. In a small bowl combine the Roma tomato, onion, cilantro, red wine vinegar, cumin, chili powder, black pepper and sea salt.
  2. Place the avocado wedges onto a serving platter or plate and spoon the salsa evenly over the tops of the avocado “boats”.
  3. Top each “boat” with 1/2 tsp of sour cream and then garnish each with one cilantro leaf.
