<\/a>Any who, we really wanted something quick and easy last night so I whipped up some of these Vegetable Quesadilla’s for the three of us. Only about 30 minutes from prep to sitting at the dinner table too, this is a really quick and easy way to enjoy the southwest favorite. I stuffed some extra vegetable filling into these three that I made, but the recipe is written to yield 4 servings.<\/p>\n\u00a0<\/p>\n

When the tortilla is browned flip and brown the other side and until the cheese is melted. Remove and slice into \u00bc wedges.
