Similar to the Southern favorite Hoppin\u2019 John, with the addition of the black-eye peas, this jambalaya version is packed full of flavor with a rice dressing or dirty rice quality that makes us come back for seconds, or thirds! CCR Finger Lickin\u2019 Rub, or Cajun Spice Blend<\/li>\n<li class=\"ingredient\">1 \u00bd Cups Onion, chopped<\/li>\n<li class=\"ingredient\">1 Cup Bell pepper, chopped (we used Poblano)<\/li>\n<li class=\"ingredient\">1 Cup Celery, diced<\/li>\n<li class=\"ingredient\">6 Cloves Garlic, minced<\/li>\n<li class=\"ingredient\">2 Cups Chicken stock<\/li>\n<li class=\"ingredient\">1 Tbsp.
