Avocado Boats with Salsa<\/p><\/div>\n

This quick and easy appetizer\/snack is only 2 PointsPlus\u00ae\u00a0per “boat” for those who use the tracking for the Weight Watchers\u00a9 (WW) system. \u00a0If you are familiar with WW then you already know that salsa is “Free”, meaning it has no points associated with it’s ingredients. This recipe that I will share today is a slightly modified version of the one I found through the WW iPhone app, and is also available online<\/a>.<\/p>\n

Ingredients<\/strong><\/p>\n

1 Medium<\/span> Roma Tomato, chopped<\/span>
\n2 Tbsp<\/span> Onion, chopped<\/span>
\n1 Tbsp<\/span> Cilantro, chopped<\/span>
\n1 Tbsp<\/span> Red wine vinegar<\/span>
\n1\/4 Tsp<\/span> Cumin, ground<\/span>
\n1\/4 Tsp<\/span> Chili powder<\/span>
\n1\/8 Tsp<\/span> Ground black pepper<\/span>
\n1\/8 Tsp<\/span> Sea salt<\/span>
\n1 Medium<\/span> Avocado, cut into quarters, pit and skin removed<\/span>
\n2 Tsp<\/span> Sour cream, fat free <\/span>
\n4 Each<\/span> Cilantro leaves, whole<\/span><\/p>\n

Putting it all\u00a0<\/strong>together<\/b><\/p>\n

    \n
  1. In a small bowl combine the Roma tomato, onion, cilantro, red wine vinegar, cumin, chili powder, black pepper and sea salt.<\/li>\n
  2. Place the avocado wedges onto a serving platter or plate and spoon the salsa evenly over the tops of the avocado “boats”.<\/li>\n
  3. Top each “boat” with 1\/2 tsp of sour cream and then garnish each with one cilantro leaf.<\/li>\n<\/ol>\n
