There are so many varieties that fall within the onion culinary category I thought I would touch on a few of them before I share my recipe for <em>Seven Onion Soup<\/em>.<\/p>\n<p>Besides the different colors and shapes of onions there are several varieties, but they all fall within the genus <em>allium<\/em>\u00a0and species <em>A. cepa<\/em>\u00a0of the scientific classification, or the <a title=\"Binomial nomenclature\" href=\"http:\/\/en.wikipedia.org\/wiki\/Binomial_nomenclature\" target=\"_blank\">Binomial name<\/a>\u00a0of <span class=\"binomial\"><em>Allium cepa<\/em><\/span><br \/>\n<small><a title=\"Carolus Linnaeus\" href=\"http:\/\/en.wikipedia.org\/wiki\/Carolus_Linnaeus\" target=\"_blank\"><span style=\"font-size: x-small;\">L.<\/span><\/a><\/small>\u00a0There are \u00a0ten\u00a0known varieties commonly available in the United States\u00a0which include: Western Yellow, Northern Red, New York Bold, Western White, Peruvian Sweet, Empire Sweet, Mexico, Texas 1015, Imperial Valley Sweet, and Vidalia. For culinary classification purposes there are the commonly known yellow onions, white onions, red onions, and pearl onions which can be found at just about every fresh market or grocery. Then there are green onions, chives, and leeks. Shallots and garlic are also lumped into the onion category of culinary uses.<\/p>\n<p>I love the aroma\u00a0produced when sauteing onions in a little olive oil. It typically means that something good to eat is coming out of the kitchen soon. One of my favorite soups is <em>French Onion Soup<\/em>, it is right up there on my Top 10 List of Favorite Soups (soon to be published). But another of my favorite soups is <em>Seven Onion Soup<\/em>, which is a veloute based cream soup containing red onions,\u00a0yellow onions, white onions, garlic, shallots, leeks,\u00a0and green onions. Served with some crispy French bread this soup is great for any day.<\/p>\n<p><em style=\"mso-bidi-font-style: normal;\"><span style=\"font-size: 14pt;\"><span style=\"font-family: Times New Roman;\">Seven Onion Soup<\/span><\/span><\/em><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">Yield: approx 4 gallons<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">Ingredients:<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">Procedure:<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">\u00a0<\/span><\/p>\n<ol style=\"margin-top: 0in;\" type=\"1\">\n<li class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; tab-stops: list .5in; mso-list: l0 level1 lfo1;\"><span style=\"font-size: small; font-family: Times New Roman;\">Saut\u00e9 the garlic and shallots in clarified butter then add the yellow and red onions and the leeks and continue to cook until soft and translucent.<\/span><\/li>\n<li class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; tab-stops: list .5in; mso-list: l0 level1 lfo1;\"><span style=\"font-size: small; font-family: Times New Roman;\">Add the roux and stir to incorporate well into the onion mixture.<\/span><\/li>\n<li class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; tab-stops: list .5in; mso-list: l0 level1 lfo1;\"><span style=\"font-size: small; font-family: Times New Roman;\">Add the warm chicken stock and whip until roux is smoothed into the liquid.<\/span><\/li>\n<li class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; tab-stops: list .5in; mso-list: l0 level1 lfo1;\"><span style=\"font-size: small; font-family: Times New Roman;\">Bring to a boil, then reduce heat to a simmer and skim any scum from the top of the liquid.<\/span><\/li>\n<li class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; tab-stops: list .5in; mso-list: l0 level1 lfo1;\"><span style=\"font-size: small; font-family: Times New Roman;\">Add the Worcestershire Sauce and fresh chopped thyme and stir well.<\/span><\/li>\n<li class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; tab-stops: list .5in; mso-list: l0 level1 lfo1;\"><span style=\"font-size: small; font-family: Times New Roman;\">Stir in the heavy cream and then season to taste with the salt and white pepper.<\/span><\/li>\n<li class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;
