{"id":1873,"date":"2010-05-05T13:24:19","date_gmt":"2010-05-05T17:24:19","guid":{"rendered":"http:\/\/cajunchefryan.rymocs.com\/blog2\/?p=1873"},"modified":"2010-05-05T13:24:19","modified_gmt":"2010-05-05T17:24:19","slug":"slow-cooker-chili-beans","status":"publish","type":"post","link":"http:\/\/cajunchefryan.rymocs.com\/blog2\/recipes\/slow-cooker-chili-beans\/","title":{"rendered":"Slow Cooker Chili Beans"},"content":{"rendered":"<p><img decoding=\"async\" style=\"border-color: #CCCCCC;\" title=\"Slow Cooker Chili Beans\" src=\"http:\/\/cajunchefryan.rymocs.com\/images\/ETL_ChiliBeans_01.jpg\" border=\"5\" alt=\"Slow Cooker Chili Beans\" width=\"375\" align=\"left\" \/><\/p>\n<p><strong>Happy Cinco de Mayo<\/strong>, and what would be more appropriate than some Mexican food for the celebration!<\/p>\n<p>Each week I have taken on a new slow cooker bean dish and this time around we used two pounds of pinto beans to create a vegetarian chili, and loosely based on one inspired from the the book <a href=\"http:\/\/www.amazon.com\/American-Wholefoods-Cuisine-Nikki-Goldbeck\/dp\/0453004342\/ref=tmm_hrd_title_0\">American Wholefoods Cuisine<\/a>, by Nikkie &amp; David Goldbeck, and found on page 43 from the short-order cooking chapter in the hardcover, 1983 edition, this chili recipe also fits in with the Eat To Live dietary guidelines with no oil, fat, or sugar added.<\/p>\n<table border=\"0\" cellspacing=\"3\" cellpadding=\"3\">\n<tbody>\n<tr>\n<td colspan=\"3\">Ingredients<\/td>\n<\/tr>\n<tr>\n<td>2<\/td>\n<td>lb<\/td>\n<td>Pinto beans, rinsed, soaked overnight and drained<\/td>\n<\/tr>\n<tr>\n<td>2<\/td>\n<td>Cups<\/td>\n<td>Onions, chopped<\/td>\n<\/tr>\n<tr>\n<td>4<\/td>\n<td>Ribs<\/td>\n<td>Celery, chopped (1 \u00bd cups)<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Tbsp<\/td>\n<td>Garlic, minced<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Tbsp<\/td>\n<td>Onion powder<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Tbsp<\/td>\n<td>Cumin, ground<\/td>\n<\/tr>\n<tr>\n<td>3<\/td>\n<td>Each<\/td>\n<td>Bay leaves<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Tbsp<\/td>\n<td>Smoky paprika<\/td>\n<\/tr>\n<tr>\n<td>\u00bc<\/td>\n<td>Cup<\/td>\n<td>Chili powder<\/td>\n<\/tr>\n<tr>\n<td>3<\/td>\n<td>Cups<\/td>\n<td>Beef stock<\/td>\n<\/tr>\n<tr>\n<td>3<\/td>\n<td>Cups<\/td>\n<td>Vegetable stock<\/td>\n<\/tr>\n<tr>\n<td>2<\/td>\n<td>Cups<\/td>\n<td>Tomatoes, diced<\/td>\n<\/tr>\n<tr>\n<td colspan=\"3\"><\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<table border=\"0\" cellspacing=\"3\" cellpadding=\"3\">\n<tbody>\n<tr>\n<td colspan=\"2\">Procedure Steps<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1.<\/td>\n<td>Drain the soaked pinto beans and add them to the pot of a slow cooker along with the remaining ingredients and stir well and cover. You want just enough of the stock to cover all the ingredients, adjust your quantity of stock as needed.
