		<description>This makes me nostalgic. At L&#039;Ecole du Cordon Bleu in Paris, we learned classic French dishes like this. They may have gone out of fashion, but it&#039;s nice to bring them back from time to time! They become like comfort food, but the good kind of comfort food.

This recipe is also good because it can be used in a European kitchen, and is not limited by ingredients one finds only in North America.
