Keith, really appreciate the heads up on the procedure omission. I have since updated the recipe steps. Roux is added to the stock in step 4.
Bon appetit!

Looks like a good gumbo, and I'm about to make it right now (minus Tasso & file). But you don't explain when and what to do with the roux in the steps. When do you add it to the stock?

Thanks, Keith

Ok, now you had to go and make me cry with that video!! Really. I love Kermit Ruffins, saw him at Vaughans, he's incredible. And your gumbo is spectacular, of course!

@Beth, Some gumbos are made without the okra, individual preferences are fine. Tasso is a specialty item and hard to find in most stores, Jacob's and a few others do sell it online.

Although I am not a fan of okra unless it is battered and fried, I realize that it is a requirement in gumbo - would it be okay if I made the gumbo and then picked out the okra in my bowl??
The recipe looks awesome.
Can you buy tasso the stores down south or does it have to be ordered?

Chef, thank you so much! This is a wonderful post--full of so much passion for your city. I've never been to New Orleans. I would really love to see this magical place some day. Your gumbo has inspired me to try to come up with a 'vegan' version! But. . . Great post, truly!
